To begin Merry Christmas ALL e. .. also a special wish that I do alone ... you know a year ago I started this blog .. a blog unpretentious but gave me small / large rewards.

the frenzy of Christmas 2009 I was sucked into a vortex of commitments and are not even able to celebrate my first birthday as it should.
never mind, it is important to be there. I hope to improve in everything that comes close in 2010.
you (and me) I dedicate this trick Holiday (has a long name but I do not know how to shorten it!)
PANETTONE CRUMBS OF CRISP, mascarpone cream and caramelized pineapple with spices
ingredients to 4 cups cake with raisins
1 slice pineapple slices 3
vanilla 1 cue
star anise 1
2 cm cinnamon
2 cloves
2 tablespoons brown sugar * 2
eggs
granulated sugar 2 tablespoons mascarpone
250 gr
* I used sugar mascobado Filipino.
turn on the grill. reduce the slice of cake crumbs and place on a sheet of stretched parchment paper placed on a plaque. toast crumbs and crisp.
chopped pineapple (if using syrup also set aside two tablespoons of juice).
in a non-stick frying pan, melt the brown sugar with spices (remove the seeds vanilla and star anise) and 2 tablespoons of water and get a caramel liquid, then brown the pieces of pineapple a few minutes. remove the seeds of the spices that give trouble, let it cool.
Tuori dividing the eggs from the whites. the first mount with sugar making them clear and foamy, then add the mascarpone working the whole with a spatula, then again with a whisk to dissolve lumps.
whip the whites and add to cream with delicate movements trying to incorporate air.
fit the glasses before placing all the crumbs of cake, then cream and finally the pineapple with caramel.
