MERRY CHRISTMAS .... and best wishes to me!

To begin Merry Christmas ALL e. .. also a special wish that I do alone ... you know a year ago I started this blog .. a blog unpretentious but gave me small / large rewards.
is a drop in the ocean of foodblogger and honestly I can not add anything to the world of cooking, but it's my space and I'm still proud!

the frenzy of Christmas 2009 I was sucked into a vortex of commitments and are not even able to celebrate my first birthday as it should.

never mind, it is important to be there. I hope to improve in everything that comes close in 2010.



you (and me) I dedicate this trick Holiday (has a long name but I do not know how to shorten it!)



PANETTONE CRUMBS OF CRISP, mascarpone cream and caramelized pineapple with spices



























ingredients to 4 cups cake with raisins


1 slice pineapple slices 3
vanilla 1 cue
star anise 1
2 cm cinnamon
2 cloves
2 tablespoons brown sugar * 2
eggs
granulated sugar 2 tablespoons mascarpone
250 gr

* I used sugar mascobado Filipino.

turn on the grill. reduce the slice of cake crumbs and place on a sheet of stretched parchment paper placed on a plaque. toast crumbs and crisp.

chopped pineapple (if using syrup also set aside two tablespoons of juice).
in a non-stick frying pan, melt the brown sugar with spices (remove the seeds vanilla and star anise) and 2 tablespoons of water and get a caramel liquid, then brown the pieces of pineapple a few minutes. remove the seeds of the spices that give trouble, let it cool.

Tuori dividing the eggs from the whites. the first mount with sugar making them clear and foamy, then add the mascarpone working the whole with a spatula, then again with a whisk to dissolve lumps.
whip the whites and add to cream with delicate movements trying to incorporate air.

fit the glasses before placing all the crumbs of cake, then cream and finally the pineapple with caramel.

Profantasy City Designer Review

HELP!!

cookies for HAZEL

the recipe is Arietta and is absolutely perfect! only that its cookies are fabulous .. mine are only good to eat .. on beauty ... must be improved!


have a nutty scent, which to me is a bit 'strange .. a bit 'strong maybe at the end of cooking, from cold but disappears completely, leaving room for a little something different from usual * pastry * giving these cookies taste incredible and unique fragrance!

I put them in Christmas gifts for my husband, I hope you like them!




















CREPES GREEN

I have prepared this Sunday

I love the crepes because you in a moment and you should not mix, then blanch in water .. In short for me are really a joker




















ingredients

for 16 pancakes

whole milk 500 ml flour 00
250 gr
2
eggs 1 pinch salt
20 gr melted butter + a bit 'to grease the pan


for the filling


600 g spinach (I had them frozen)
300 g Swiss chard (ditto)
carrot + onion + celery 1 tablespoon
ricotta cheese 250 g grated Parmigiano Reggiano
.
6 tablespoons salt and pepper to taste
extra virgin olive oil to taste

for gratin

cream 250 ml
grated Parmigiano Reggiano.
6 tablespoons butter 10 gr
black pepper to taste


prepare crepes

in a mixing bowl whisk the flour with half the milk, add salt, eggs and cooled butter. remove any lumps and let stand 30 minutes - 1 hour.
heat a pan of about 20-22 cm in diameter and grease with butter. pour a ladle of mixture into pan and turn well to cover the surface. cook well on the one hand and then using a spatula to lift the edge of the crepe, then turn the other side and finish cooking.
often the first crack is the ugliest. Just do not over-grease the pan.
with this dose there are about 16 22 cm wide cracks.


for the filling

heat the oil and vegetables in a pan, then add various herbs and let simmer 20 minutes. I was frozen spinach and beets, and then I added a bit 'of water and cooked for a long time. if you use fresh cooked only with the washing liquid.
cool and blend in the mixer with the other ingredients provided.

spread with filling the crepes. I have the roll and cut in half and then placing them in cardboard bowls for the microwave. 4 can be bent at a triangle, or cut into logs, or diagonally .... In short you do!

for the sauce

I warmed in a water bath butter with the cream cheese and blend well making the whole thing, adding a generous grinding of black pepper.


become gratin in the oven 15 minutes.

note: this filling in Reggio Emilia gets into ravioli. like any regional dish, every family has its own version. My mom has always done this. spinach, chard, ricotta.
